1 1/2 lb(s) shin (with bone)
5 slice moist white bread
1/4 tsp nutmeg
1 whole chopped onion
1 whole egg
2 whole eggs
1/4 cup water (should be equal to 4 half egg shells)
2 cup flour, sifted
Cover first 3 ingredients with water and cook until tender.
Remove the meat and grind in a food processor.
Save the broth.
Mix next 5 ingredients with the ground meat.
Beat the 2 eggs, water and salt together.
Add the flour a cup at a time.
Roll out and cut into squares.
Fill with meat.
Fold the noodles over meat; seal with a drop of water.
Bring broth to a boil.
Drop in the noodles and cook about 10 minutes.
