This is my attempt to reconstruct a meal a friend of mine cooked me once. If you're a fan of balsamic you'll love this. Feel free to substitute the zuchinni for another veggie or to add olives.


1.5 lb(s) Chicken Breast
1 Onion (medium)
2 Zuchinni
4 clove Garlic
1 can Diced Tomatoes (28oz)
1/4 cup Balsamic Vinegar

Preheat large frying pan over medium heat with a tablespoon of olive oil.
Chop onion, dice garlic, chop zuchinni, trim and chop chicken.
Saute zuchinni until it starts to brown.
Add onions and a pinch of kosher salt and saute until soft.
Add garlic and saute for a minute.
Add balsamic vinegar and allow to simmer for a minute.
Add tomatoes and chicken.
Reduce heat to low, cover, and simmer until the chicken is done (approx.
5-10 minutes).
