First appeared as a clam sauce, but the clams are optional. Since the tomatoes saute in the oil, it's an oil, not a tomato based sauce. Can be made in a hurry!


3 clove garlic, chopped
3 tbsp olive oil
14 oz chopped tomatoes
1/2 tsp oregano
1/2 tsp dried sweet basil

Saute, but do not brown, the garlic in the olive oil.
Add the chopped tomatoes, salt and pepper to taste, the oregano and basil.
Simmer for 10 minutes.
You may also add: 7 oz drained chopped clams; 3 Italian sausages, browned and sliced; 1/2 lb.
small, cooked shrimp or 1/2 can anchovies, drained.
