Nashville, TN. 'The Pancake Pantry' home of the 5-star Sweet Potato Pancakes.


1 cup AP Flour
1 cup Whole Wheat Flour
4 tsp Baking Powder
2 tbsp Brown Sugar
1 tsp Cinnamon
1 pinch Nutmeg
2 cup Milk
1 1/2 tbsp Butter (Melted)
2 whole Eggs
1 L Sweet Potato Cooked, Peeled, Pureed
1/4 cup Finely Chopped Roasted Pecans
1/2 lb(s) Butter, Softened
1/2 tsp Cinnamon
1 tsp Vanilla
1 tbsp Brown Sugar
1 tbsp Honey

Sift Flour and mix first 10 ingredients until smooth.
Cook on buttered surface until golden brown.
optional: Combine last 6 ingredients (Pecan Butter Spread) roll in parchment and freeze.
Cut slices to top pancake.
