Sat in on a pampered chef demo with Kate. Felt like I was in the live audience of an infomercial, but the recipe she made was actually pretty good.

Ingredients:

2 pkg Cresent Rolls (8oz Refrigerated)
1/2 cup Mayo
1/2 cup Sour Cream
1 pkg Dry Veggie Soup/Dip Mix (10 oz)
10 oz Frozen Spinach
14 oz Artichoke Hearts from can
8 oz Sliced Waterchesnuts from can *Optional*
4 oz Feta Cheese
2 clove Garlic
1/4 cup Parmesan Cheese

Preheat Oven to 37 Unroll one Package of crescent dough across one end of a 10x15 bar pan with the logest side of the dough across the width of the pan.
Repeat until pan bottom is completely covered.
Use rolling pin to combine dough slices to create one layer of crust.
bake 10-12 minutes or until crust is golden brown.
Combine mayo, sour cream, veggies soup mix in bowl and mix well.
Squeeze out any excess liquid from the spinach by ringing it out in a dark towel.

Add to bowl.
Drain and chop artichokes and water chesnuts and add to mixture.
Add Feta cheese (crumbled) and 2 cloves of garlic (pressed or minced) to mixture and mix well.
Spread mixture over crust and grate parmesan on top in think layer.
Bake 10-12 minutes until Cheese is melted.
Allow to cool and cut into sqaures.
